White Battenburg
Got any good cake recipies?
me and my hubby have caught the baking bug and loving making cakes. so far we made, a chocolate cake, a white chocolate and rapberry cake, and we went mad and made a battenburg last week, got any good recipies, we want to try something new! (omg how sad are we lol)!!
I made a fabulous chocolate cherry cake a few weeks ago...
125g soft butter
100g dark chocolate, broken into pieces
i jar cherry jam
150g caster sugar
2 large eggs, beaten
150g self-raising flour
Preheat the oven to 180c, or gas mark 4
Put the butter in a pan ona low heat to melt. When nearly completely melted, stir in the chocolate. Leave for a moment to begin softening, then take the pan off the heat and stir with a wooden spoon until the butter and chocolate are smooth and melted. Now add the cherry jam, sugar and eggs. Stir with a wooden spoon and when all is pretty well mixed stir in the flour, till just combined
Pour into an 8inch cake tin, and bake for 30-40 mins, or unitl a skewer comes out clean minutes. Cool in the pan on a rack for 10 minutes before turning out.
When it's totally cold, make icing by mixing 200g melted white chocolate with 1 tub of mascarpone, and spread over the top and sides of the cake.
